Restaurant Laurel: to reinvent tradition at Conrad Algarve

Make a mistake who thinks that not playing in the tradition and who judges that a classic of the cuisine can’t be changed. The chief executive of one of the spaces of reference of the stylish and award-winning Conrad Algarve, set out to reinvent the most traditional Portuguese flavors, so unpretentious, which resulted in a letter fresh that came to transform the whole of the restaurant Laurel. In the new letter of restaurant Laurel , there is now an entry for “Salmon Cured with pickle beet, radish & apple Granny Smith gel and salsifi” (€14) or a so-traditional “Xerém of Clams”, which arises “only policeman 48ºc, xerém, algarve, gel of coriander and greaves” (€22). The news of the letter are also part of the “Fish Soup”, of course confecionada with fish of our coast, and in the company of a ravioli only policeman (€15), by the “Bacalhau Fresco” (€32), and by the “Polvo à Lagareiro” (€32) served unusual with pureed white beans and coconut, sautéed greens, paiola alentejo and garlic mayonnaise.

Osvalde Silva presents also, in the letter of the restaurant Bay leaf, the “Tournedos Rossini” , which features a beef tenderloin roast, foie gras, potato, cylindrical, micro vegetables and Madeira sauce (€38), and other novelties, designed to share. For two there is “Cataplana Algarvia” (€70) and “Fish in Salt” (€75). Of course, the desserts have not been forgotten, presenting itself now, in the letter, the “Orange Blossom”, a combination of the algarve with compote of orange, pudding, carob bean gum, ice cream orange blossom and crumble of almonds (€12) and also the “Vanilla of Tahiti” (€14).

More than a menu of traditional, the new card from the restaurant Laurel (at Conrad Algarve, Estrada da Quinta do Lago, Almancil. Tel. 289 350 700) is inspired by the typical Portuguese cuisine, a surprise and a good reason to, even with the summer to say goodbye, to return to travel to the south and (re) discover the Algarve.
