Already got one of the high points of the calendar of the gastronomic city of Porto. The Days of the Old Ox of Trás-os-Montes return to the VINUM Restaurant & Wine Bar, in the iconic Cellars of Graham’s, on the hillside of Vila Nova de Gaia. The fifth edition of the event, which counts with the support of the Symington Family Estate, this year, behind news.
For the first time, the two types of meat are more highly valued by great cooks in the world – the old ox and the cow the old – will be confronted at the table. The goal is to show the differences and similarities of these meats of exceptional quality, selected especially for this event by the hands of Imanol Jaca, one of the biggest experts on beef from Europe.
The secret, guarantee, is at the origin. The oxen old selected for the event are from Minhotães, a small village in the municipality of Barcelos with only 800 inhabitants. The animals were noted for their care and kindness with which they were created during the years, developing unique features and unequaled.
Already the flesh of cow old, of the breed Rubia Gallega, which will be served in the Days of Old Ox of Trás-os-Montes, is one of the most unique and appreciated throughout the world, and is from a small mountain village in the interior of Galicia, at an altitude between 300-600 meters. The weight of each animal varies between 450 and 500 pounds. These cows galician, considered by international critics as the best beef in the world, are very difficult to find.
Now in Port, and after twenty days of “rest” and mature in San Sebastián, in the Basque Country, both meats will be treated with accuracy, from the cutting to the cooking, without any additional treatment. The goal here is to preserve the authentic taste and clean of meat, that, by itself, absolve the company.
The tasting in the Days of Old Ox of Trás-os-Montes, or the settling of accounts, will be done by visitors themselves of the VINUM Restaurant & Wine Bar , which, this year, you can choose two menus: the classic, with the “txuleton” old ox, the star of the event, or the alternative, with the “txuleton” cow old. Both are accompanied by products of that time and harmonized by the wines of the Symington Family Estate.
The Days of the Old Ox of Trás-os-Montes extend for about three weeks in the VINUM Restaurant & Wine Bar (Rua do Agro, 141, Grahams Port Lodge, Watered, Vila Nova de Gaia. Tel. 220 930 417) or at least as long as the limited quantities of meat will allow. For this reason we recommend early booking to ensure a privileged place in the event.
